Fall Salad with Maple Lime Dressing
Roasted butternut squash
- 1 lb butternut squash peeled, seeded, and cubed into 1-inch cubes
- 1 tablespoon olive oil
- salt and pepper
Salad dressing
- ? cup extra virgin olive oil
- 2 tablespoons Dijon mustard
- ¼ cup maple syrup
- 1 small lime - juice freshly squeezed
Salad ingredients
- 8 oz bow tie pasta
- 1 cup pumpkin seeds toasted
- 8 oz baby spinach
- 4 oz goat cheese
- ½ cup dried cranberries
